Don't know what took me so long to make this as I am all about healthy food and cutting back on some carbs here and there! Which don't get me mistaken... carbs are not the enemy. Not all carbs are bad and we need them for energy.
That being said let's move along right into the recipe vs me getting into some story about carbs and fats and your body and energy. Cuz if I am being completely honest... I don't think dairy is natural (there's quite a bit of cheese in this recipe) and I sure as heck don't consume it when I am looking to shred as much fat off my body as possible. But let's get one thing straight... um, I freaking love pizza.
What you need :
- 1 head of cauliflower (about 2 cups worth when chopped fine)
- 2 egg whites and 1 yolk
- 2 cups of shredded mozzarella cheese - for crust
- Spices of choice
A sprinkle here and a dash there is my motto! )
- Toppings of choice - a great time to get in some fresh veggies!
- 1 cup of motz for top of pizza
- 1 cup of pizza sauce of choice
What you do:
- Cut or break cauliflower into pieces that fit in your blender, ninja or food processor
- Don't use large stalk
- Blend until fine
- Pat dry with clean towel to get out any moisture
- Mix in bowl with 2c cheese, spices and 2 egg whites and one yolk
- Place on greased pan or pan with wax paper or foil
- Spread out thin with hand or roller

My first time around it was thicker than anticipated and it was still kinda soft in the middle
- Bake in oven at 375 for 20 minutes or until done in the center.
- Once crust is done in center, remove from oven and top with sauce of choice (I prefer an organic pizza or tomato sauce if I don't have time to make my own sauce)
- Spread sauce out evenly and sprinkle on 1 cup of cheeze and toppings of choice
- Return to oven for 10min or until cheese is melted and toppings done to liking
I did one with broccoli, onion and pepper and another with pepper, onion and turkey pepperoni
Both turned out great and were enjoyed by the whole family! Even the picky hubby said the crust was good! Winning!
