Shrimp Bruschetta Pasta

I'm not one to make much pasta... I've never been a huge fan... mostly because it's a mental thing about what is in it and will it make me fat? HA yup. I got problems.. but I wish I could still ask myself these questions when it came to everything I shouldn't be consuming.. you know like burgers, fried food, soda, candy.... gahhhhh Why can't I just only like vegetables, fruit and occassional lean meat ha?

A girl can dream, right?

Well... enough dreaming.. here is a healthy recipe. All in moderation right?!

What you need:
Organic whole grain pasta of choice - 1 box
2 large Fresh garden tomatoes - chopped
20 leaves Fresh basil - chopped
3 cups shrimp
extra virgin olive oil

What you do:
Cook pasta on stove top and drain
pour in a little extra virgin olive oil to keep pasta from sticking together
(use truffle oil for added yum!)
Cook shrimp on stove top and remove any shells or tails
Mix all items together
Serve and enjoy!

This is also yummy cold the next day! --- My favorite kind of meals. Quick, easy, healthy and yummy the next day!
