Bruschetta

One thing I love when it's garden time... fresh basil and tomatoes. mmmmm

So how about some fresh bruschetta?! 

I love it on some french baguette, or even over some pasta with shrimp. Check out my recipe for Shrimp Bruschetta Pasta! 

What you need:
1 large fresh tomato cut into small cubes
1/2 onion, cut into small cubes
spoonful of capers (optional)
olive oil
fresh basil - the more, the merrier
baguette or bread/cracker of choice


What you do:
Cut up baguette or bread into small slices
place chopped up tomato, onion, basil and capers in bowl
drizzle with extra virgin olive oil and mix
Top bread with bruschetta mix, serve and enjoy!
