Sugar Free Chocolate Quinoa Brownies

So you may find that I am human and I don't eat 100% clean all the time.. however you will find that I do my best to change things up and make them healthier than what you may buy at the store or find at a friend's party.... 

That being said... I also have a sweet tooth, so how about you try this brownie recipe!? 
  • What you need:
  • 3 cups cooked quinoa
  • 3 egg whites 
  • 1 teaspoon vanilla liquid stevia
  • 1 teaspoon vanilla extract
  • 1 1/4 cups sugar free chocolate chips (Easy Life brand are a great alternative)
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/3 cup flaxseed, ground
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon pure stevia extract

What you need for Sugar-Free Frosting
What you do:
  1. Combine all ingredients into a food processor and process until completely incorporated.
  2. Line an 8 quart sized crock pot with parchment paper.
  3. Spread batter into crock pot.
  4. Cover and cook on low 4 hours or high 2 hours.
  5. Lift onto a wire rack to cool before slicing.

  6. Make frosting by whisking ingredients together and microwave for 20 seconds.
  7. Taste, add more sweetener if needed.
  8. Stir well again then top over brownies.
