How about slow cooker egg florentine?!
Some days there are just not enough hours in the day, so glad it is slowcooker season!!!
What you need:
1 pound ground turkey (or a lean burger of choice)
2 tablespoons fresh sage, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon crushed red pepper flakes
1 tablespoon dark pure maple syrup (for those figure competitors not against sugar substitutes you could always do sugar free syrup)
1 teaspoon salt
1 teaspoon freshly ground black pepper
8 ounces fresh baby spinach
6 ounces feta cheese, crumbled
12 eggs, egg whites or egg white substitute

What you do:
In a medium bowl,` mix turkey with sage, rosemary, thyme, red pepper flakes, syrup, salt, and pepper until just combined.
Cook mixture in a large skillet over medium-high heat until browned. Remove from skillet and transfer to the bottom of a slow cooker.
Grease from burger can be drained prior to putting in slow cooker.

Top mix with spinach and feta once in crockpot.
Whisk eggs in a large bowl to combine. Season with salt and pepper, then pour into slow cooker. Cover and cook on low for 8 hours. Serve. Enjoy!
