What you need:
3 cucumbers
2 roma tomatoes
1 red onion
2 avocado
1/4 cup sliced pitted kalamata olives
What you do:
*Wash your veggies (duh)
---- if you're a real housewife of beverly hills, don't use soap.
*Cut your cucumbers into slices
*I like to peel off a little of the skin. Sometimes the skin can taste a little funky depending on the soil in which it was grown. Plus peeling it can give it a more appealing appearance once it is sliced. Then you have striped cucumbers :)
*It's also important to make sure you make a mess.
I spend more time cleaning up than I ever do cooking or preparing food.
*Next, cut the tomatoes into slices then into fours.
*Cut the avocado into cubes as best as possible. Depending how ripe they are, they might just squish into little balls, and that's just A-O.K.
*Cut your red onion into slices and then small pieces
*Now you can add all of the ingredients together into one large bowl
*Sprinkle fresh ground pepper and fresh ground Himalayan sea salt to taste
*Serve fresh
(It may get soggy within 24 hours. It is still delicious though. The day after I used leftovers to put on ezekiel bread with hard boiled egg!)
