What to do with all those leftover hard boiled eggs?!
Well, egg salad of course!!
8 eggs
(I only use 3 yolk)
3 heaping tbsp plain Greek yogurt
2 tsp yellow or spicy mustard
Black pepper
Stalk of celery chopped
1/4c chopped red onion
Mix all ingredients
Serve on Ezekiel bread or over mixed greens!
