Super easy Shrimp and Cous cous
I prefer Israeli (pearl) cous cous just because I like the larger "pearlness" and the texture but you could use any cous cous.
What you need:
2 cups dry uncooked cous cous
1lb uncooked, deveined, peeled shrimp
4 tomatoes, chopped
1 large cucumber, chopped
1 green pepper, chopped
1 red or yellow pepper, chopped
1tsp ground coriander
12 sprigs fresh cilantro, chopped
sea salt and black pepper to taste
*Prepare cous cous according to package directions (usually like rice on the stove with boiling water, then drain water)
*Cook shrimp on stove top, covering with a bit of water
*Add all items together
*Serve
*Enjoy!
So good and so quick!
I think clean up took longer than the cooking did!
This dish is great served warm or cold! Perfect to store in the fridge for a quick and easy HEALTHY meal when time is minimal!
