Pumpkin Chili

I just love pumpkin and I am not afraid to hide it! Basic white girl they say? Ehhh so be it !

Pumpkin is delish and it's for anyone. There is so much you can do with it so why not add it to our chili?

What you Need:
1lb lean burger (your choice... turkey, beef, venison, or a mix! Don't like turkey or venison? Even tho they are GREAT lean choices... Try them in your chili mixed with beef! 
2 cups 100% pure pumpkin
1 tbsp chili powder
1 tbsp red pepper flakes
2 tbsp pumpkin pie spice (nutmeg, cinnamon and clove)
2 tomatoes, chopped
1 can dark red kidney beans
1 can light red kidney beans
1 can fava beans
1 can garbanzo beans
1 can black beans
(really.. whatever beans you like! I like them all!!!)
1 small chopped onion
1 chopped green pepper

What you do:
I used to cook the burger on the stove top but now I just cook it in the crock pot alone and drain the grease! 
Cook burger approx 2-3 hours until mostly done
Add rest of ingredients, mix together
Cook another hour and serve! 

Have an instapot??!!! Its a life saver! You can throw it all in the instapot n go! 

I put it all in - cook 40 min on steam n you're good to go! 

Top with avocado!? Yes please! 

..... have the time to cook fresh beans vs canned? That's the way to go but I'm busy like you so I just buy low sodium canned. But you could easily cook your beans in the crock pot the night before!!
