Breakfast Quinoa

I actually got this idea from eating my holiday stuffing recipe cold for breakfast! It was so good warm or cold. And just recently I was hungry for it for breakfast and just happened to buy some quick 90 second microwave packets of organic grain and quinoa blends and had apples in the house.. cuz tis the season!

You can do the longer version.. which still doesn't take very long. or you can use 90 second packets in the microwave if you don't have much time to spare! 

What you need:
3 cups quinoa or a quinoa blend 
1 apple chopped
1/2 cup craisins
1/4 cup almond slivers
1/4 cup seeds if desired - I actually added some chia seeds, sunflower seeds and flax. 

What you do:
Cook quinoa as directed... on stove in water or use easy microwave packs
Add all items together... mix and serve! 
Eat warm or cold!

obviously 3 cups of quinoa can go a long way so store the rest in the fridge and have it cold for breakfast for the week! mmmmm What a way to wake up happy! Knowing that you already have something yummy and nutritious for breakfast made and ready to just grab and go for our busy lives!
