What do you do when your hubby has been jonesin for fried chicken?
Well, first, you are grateful that your fussing toddler had you leave the grocery store in a rush and you forgot to grab some premade fried chicken to satisfy the hubs even tho you were planning on taco salad night...
So props to the almost 2 year old for letting mommy miss that chance at yucky fatty chicken that would have just made everyone feel dumpy!
Everyone had taco salad for dinner (minus the chips that hubby wanted cuz well, I remembered those while paying and there was no way we were turning around to get anymore items with lil miss grinch who needed food and a nap!)
Around 1am the hubs decides to make some homemade fried chicken - so we made it a team effort. Yeah even the toddler joined. Our sleep schedules are a little whacky right now to say the least.
Without further adeui here is the amayesballz recipe for a healthier and homemade "fried" chicken treat that's going to fulfill that craving without leaving you feeling dumpy or worse, you know in a room of the house for the rest of the night !
What you need:
2 thawed boneless skinless chicken breast cut in half or in strips
4 egg whites in a bowl
1 cup oat flour (I make my own by blending oats in a blender or ninja! so easy and my preferred flour!)
seasoning of choice- mine was plain, hubby used a spicy red pepper creole seasoning
cooking oil of choice, avocado, coconut, vegetable etc
What you do:
1. After your chicken is cut into halves or strips, use a meat tenderizer to thin it out. If you don't have a meat tenderizer because you never remember to purchase one, use your fist to get out aggression on your food or use a hammer. But make sure to clean your hammer and put plastic wrap over the chicken. I used my fist. Hubby used the hammer. haha
2. Next, coat it in a layer of oat flour
3. Then coat it in egg whites by dipping it in a bowl of the whites
4. Coat again in oat flour - sprinkle seasoning of choice at this time
5. Next cover just the bottom of a frying pan with oil of choice, we chose coconut
6. Place battered chicken in pan, cover
7. Once underside is golden brown (about 7 min on med flame) flip to do other side
Always ensure chicken is cooked thoroughly to a temp of 165F.
You may not use all of the oat flour. I needed extra because I make a mess :)
Hubby made his chicken into a sandwich with blue cheese crumbles!
I topped my chicken with a little blue cheese crumbles and honey! And served it to myself with mixed greens topped with strawberries and almond slices! No dressing needed with that yummy chicken and honey on the side!
Pair it with a veggie of your choice! Season it and go without a sauce or do a sauce of your choice!
Side note: make your own sauce with greek yogurt for more protein and less fat! Maybe greek yogurt and sriracha for a spicy mayo type sauce?!
