Who doesn't love a healthy little cookie for some energy?

What you need:
3 cups oats (steel cut if preferred) blend fine in blender/ninja/processor if you want less texture
1 cup 100% pure pumpkin puree
1 cup natural peanut butter
1 packet vanilla shakeology
2 tsp pumpkin pie spice
1/4 cup pure maple syrup or raw honey or sugar free syrup (don't want the calories? You can skip this!)
1/4 cup chocolate chips if preferred
Want a little extra crunch? Add flax seed, chia seed or even some pumpkin seeds!
What you do:
heat up peanut butter until it is just a little melty (I may have made up that word)
mix all ingredients together
roll into balls about 1 inch
place on cookie sheet and refrigerate for about an hour
enjoy!
