Better For You Strawberry Pie!

Fresh strawberry season... the perfect time to pick your own and of course make pie!

I decided to try my hand at not only making my first strawberry pie but skipping out on white flour and sugar and it was a success!

For a 9in pie crust- 
What you need:
*1 stick of cold butter cut into small squares (yeah not the greatest but I wasn't chancing skipping out on this too. Maybe someday I'll try a crust with applesauce instead)
*1&1/4 cup oat flour (I use a ninja to turn oats into flour! a processor would work too!)
*1/4 tsp salt
*4 tsp cold water

Mix salt, flour and butter in a bowl together until butter and flour crumb together.
I put mine in the ninja for a few seconds and that worked just fine.
Next add the water one tsp at a time. You may not need all of the water. Just enough to make sure that it all clumps together into one ball.
With regular flour you would do this and then refrigerate it for 4 hours however with the oat flour you may not even have to refrigerate it at all.

Roll the dough out flat to put into your pie pan. If you're finding it is not staying together place it in the fridge for about 20 minutes and try again. (Rolling it with plastic wrap or wax paper between will also help to keep it together.

Once you have your crust ready and in your pie pan you have 2 options.
You can cook the strawberries in the crust or you can just cook the crust and later add the strawberries and gelatin. I would recommend cooking the crust separate and then adding strawberries later.

What you need for pie filling:
1 quart fresh strawberries cut into slices
1&1/4 cup water
1/4 cup stevia or 6 packets
2 packets of gelatin

What you do:
boil water on stove
once water is boiling add stevia and gelatin
mix until gelatin is completely dissolved
let cool a few minutes

Once pie crust is ready- add strawberries and then pour gelatin water over strawberries.
Refrigerate for about an hour or 2. Gelatin will solidify and your pie will be ready to eat!
Top with a little cool whip if you want!

Yum!

So good and not as bad for you!
