So you say you love tacos and all things Mexican?!
How about some low carb Mexican lettuce wraps?!
What you need:
*1lb Ground burger; beef or chicken or turkey or a mix !
I often do a mix of beef and turkey as to keep the hubs happy but sometimes I can get away with super lean turkey burger with no complaints from the fam! lol
*1tsp ground cumin
*2tsp ground red pepper
*Head of lettuce
*Tomatoes of choice, sliced or diced into cubes
*Onion cut into small pieces
*Shredded cheese if desired
*Plain greek yogurt in place of sour cream, if desired
*Black beans
*Salsa
Cook all of burger in a pan on stove top until brown and done thoroughly
Add spices as burger finishes cooking
Mix well
Drain grease from burger
On plates, lay clean leaves of lettuce to use as wraps
Add 1/4c of burger to lettuce and 1/8c black beans
Top with sprinkle of diced onion, cheese (be sure to keep track using your 21DF containers!!)
Add a bit of plain greek yogurt if desired and salsa for more kick!
